“My” Famous Granola

In all fairness, I can’t take full credit for this recipe. It is a combination of recipes I googled, recommendations from friends, and my own trial and error. It has become known as Jaimee’s Famous Granola in my family because I make it for friends and family every year around Christmas.

All ready for Christmas gifts!

Homemade Granola - yield: approx 5 cups

3 cups large flake rolled oats

3/4 cups sliced or slivered almonds

1/2 cup raw sunflower seeds

1/2 cup raw pumpkin seeds

1/2 cup walnuts pieces

Handful of flax seeds

Handful of hemp seeds

Handful of shredded coconut

1/2 TBSP wheat germ (optional)

1/2 TBSP cinnamon

1/4 TSP salt

2 TBSP canola oil or melted butter

1/2 cup of maple syrup or honey

1 cup dried fruit -raisins, cranberries, apricots... (optional)

For a sweeter granola:

  • drizzle of vanilla
  • 4 TBSP brown sugar

Preheat oven to 325 and place rack in centre of oven.

Line a cookie sheet with parchment paper.

In a large bowl combine oats, nuts, seeds, wheat germ, coconut, salt, cinnamon, (and brown sugar if you’re using it).

In a small bowl stir together oil, syrup (and vanilla if you're using it).

Pour wet mixture over dry, and stir until coated.

Spread mixture into a single layer on cookie sheet.

Bake for 15-20 minutes until brown, stirring occasionally.

Once baked, separate large clumps while mixture is warm

Let cool completely, then add dried fruit if desired.

Store in a bag or airtight container in fridge. Will keep for several weeks.
